Scones...typically scones are served with tea, known as Afternoon Tea (working man's tea) or High Tea (dinnertime)I rather like the tradition but being an American, tradition is out the window as scones are served anytime and not usually with tea. Below is the promised recipe for my strawberry shortcake and some alternative uses. The guys here love the scones but I don't make them often because I don't want to HAVE to make them daily:-) I dusted these with a little powdered sugar just for appearance purposes. I pasted the strawberry into the image because I promised to show it when ripened:-) Lynn's strawberry shortcake Slice your berries and add sugar to make the juice, I let this set in the fridge for at least two hours before making my scones, stirring occasionally to make the sugar liquify. Double Recipe Scones (you can cut this in half if you want only a few scones) 12 tablespoons Butter -- softened (margerine makes them too dry) 4 cups Flour 12 tablespoons Sugar 1 teaspoon Salt 2 tablespoon Baking powder 2 Eggs -- beaten 1 cup Milk (or cream) Cut butter into the dry ingredients. Add the beaten egg and milk. Stirring it all together till the dough clings together. Knead gently on lighltly floured board about 12-15 times. Cut the dough in half. Shape into 4 balls. Flatten balls into 6" circles about 1/2" thick, with center slightly higer than the outside edge. Cut each circle into 4 wedges. Put them onto an ungreased cookie sheet so that they don't touch. Bake at 425F until deep golden brown about 12-15 minutes. Optional*** To give the scones a shiny top brush with a lighlty beaten egg before baking but this is not necessary. ***You can also just put half the recipe into two 8" round cake pans.*** When done I slice them while still hot, butter each side, place in serving bowl and then put the strawberries on immediately so that the juices soak into the scone. Let cool in the refrigerator if you wish, I serve mine warm with the cool whip (non dairy product) or real whip cream. ( I sometimes use french vanilla ice cream instead of whip cream) I usually don't give out my personal recipes but hey, its too good to not share:-). If I don't have strawberries I use just strawberry jam, without the whip cream as a breakfast or noon scone. I also serve just the scones with beef stew or corn chowder. Enjoy!
