I went to the world championship gumbo cook off yesterday and was total bum out. They was not serveing gumbo intill today. I told a lot of them they should had had that on the web page or the hand out bookels. I was not a happy camper yersterday. They haveing it today and i can not go lol I going to another state park today. I did get photos and ate some good food but it was not gumbo. Here is some of the crayfish boudin I bought and ate. I took a bite out of it already as you see the skin is over laping the top of the boudin. This is the best crayfish boudin I ate so I was happy after I ate some. Guess people right about me I get mean as a bear if I do not eat. I got more photos like the champs of last year and all. People danceing and eating too. people walking around too and cooking some too. some of the stands or booths if you call them that. we see what is what thanks for loooking and comments too

Succoth is the festival of the booths. I found it once to understand the marketing guys who manned the Douglas booth at the Navy League. This looks like excellent fare.

boudin is a type of sauage . You can go to the store in the morning and buy it hot to eat for breakfash around here. It meat and rice mix with spices and put into a sauage caseing . most the time the boudin is made out of pork oh foorgot if any one like cajun food go here http://www.gumbopages.com/

This is a different sort of sausage.I bet it has a unique taste.I suppose you will have to make your own gumbo now to satisfy your urge.

I have all the ingredients to make gumbo. I also have shrimp & fish. I'm gonna use them both. I hope that's permitted when making gumbo. lol q-: That looks yummy Jock! Sorry you missed the gumbo. Thanks for the teaser peek! (:

never even heard of budins before now. sounds like i would like them. I used to catch cray fish with a 3 gallon buckeds with metal scrap wired on to bottom sink it. and hole in side with chicken wire funnel going in and wires would flip up to let cray fish in. they are good added to most foods. used old cow or pig bones from slaughter house for bait.

Ah, we do something similar to that up North here....steamed cabbage leaves as a casing with ground beef, pork and rice with spices inside.

Ahhhh... You people of French ancestry... all you ever think about is LOVIN' and FOOD... hehehehee...ah well, what else is there to give life pleasure... come to think of it, that just about covers all Men, eh ?? HE HE... Love the photo but not sure of the taste though.. Looks like it would look better tastin' with some steam comin' off it... come to think of it, I am a bit hungrier now that I have looked at thhis picture... my my , I feel like Pavlov's dog with my mouth watering for some sausage and potatoes... my ancesters were Polish and we like our foods as well it seems...a 5++++ for makin' me hungry..

Great shot, Jock. Love the way sunlight and shadows work on this picture. The shadows on the table and sausage is pretty cool i think. I am completely blank when it comes to Cajun and Gumbo.... But it looks interesting.. That sausage looks kinda tasty.. I always found many of the worlds different food cultures very interesting. This picture and story is great and educational.
