here some people just sitting around eating Red Beans 'n Rice, Jambalaya, and what ever else. Remember if you cook any recipe you do not have to add the hot spices. gumbo will still taste good with out the red peppers but you have to make the roux right to get a good gumbo. I use a hand full of flour and some cooking oil and stir the mixure intill it a dark brown color then add the water. just stand back a little so it will not get on you or the stream also from the water. if you burn the flour; thow it away and start over again. You got to stir it all the time. some will cook it on low for two hours or more and some like me will cook it fast on high. if you donot like the oil just use flour and brown it that way; but it the same tast and if you burn it which you can tell by looks and smell thow it away and strat again or the burnt taste be there. or Paul Prudhomme [ thanks to NekhbetSun for spelling it right. go to show i even ask some one at the coffee shop to spell his name and it was spelled wrong] ..... anyway he make a roux that is diff but it taste super and will taste like gumbo should tast plus is do not have the fats as the oil and flour would have i type in "Paul Prudhomme Gumbo recipes" in google and came up with a lot of them so do his and you will not go wrong. If you think it be too spice use use a little to your likeing and be be all good. I have to add more red pepper myself. man I hunger now lol thanks for looking and comments and votes. sorry i do not sent thank yous out for I time press for now

A very good natural unposed shot of these young people having lunch. well done Jocko. Over here in the UK I would be a little nervous of taking shots specifically of younger people, I don't think people understand the values of photography. IMO there is a massive paranoia here in the UK caused by the culture we have of the protection of children.

Goodoleboy has got me singing Jambalaya now!!! (I've actually got a recording of that song by the Carpenters) YES!! I admit it. This old space hippy has a soft spot for Karen Carpenter's gorgeous voice!!!!! Anyway, now I'm chasing rabbits as you say Jock! Now you're making me hungry to try gumbo, but I would probaly put okra in it because I love okra and can't get it fresh out here. But it's good for thicking up stews.
