Just for fun!! I've always adored old diners like this. We took a summer vacation one year and drove up to Hershey, Pennsylvania to visit Hershey park, what a fun place that was, and then went in search of some old diners I had seen on a cooking program.
One of my favorite recipes I got while visiting was this:
they are called Fiesta potatoes
Make your basic mashed potatoes (real not the boxed stuff lol)
Then add some sauted green bell peppers and chopped onions. And bacon bits, (not that jarred stuff no cheating) and about a cup of sharp cheddar cheese. Put in a baking dish add a bit more cheese on top with some chopped green onions and broil. Or put in crock pot and keep warm.

Bake potatoes ( I usually bake them the night before then refrigerate them) the way I do potatoes, is to pierce potatoes a few times with a fork, I then take a piece of foil add a tsp or so of cooking oil and lightly roll potato in oil then sprinkle on a seasoning salt I get mine at Cracker Barrel restaurants its called Baked potato seasoning salt. Then wrap in foil bake in oven for one hour at 475 degrees that is the secret to the best baked potatoes ever ... don't tell anyone ... ok
Then take the pre baked potatoes slice into wedges. Preheat oil in skillet fry potatoes, add sauted onions, basil, tarragon, and salt and pepper, remove from skillet and top with shredded cheese I always use a mixture of Monterey jack cheese and sharp cheddar cheese. I make this along with a breakfast casserole that I make the night before for Christmas morning all you have to do is stick it in oven for an hour.. if anyone wants that recipe send me a note I would be happy to share it..

This takes me back. My first job ran until 1 a.m. With overtime we got out at 3 a.m. and would have breakfast at a diner much like this. The food wasn't fancy but it was good. Thanks for the memories.
