I hope 3Dage doesn't mind me using this title, it was his idea. So my research on Cheese on Fire continues. This is what I have so far.

Here is a video of a flaming Greek cheese dish called "Saganaki" literally the cheese is set on fire with cognac or brandy then a squeeze of lemon juice over the top then served table side! Great eats for after the pubs close. http://www.youtube.com/watch?v=bK1fOY9uueg
