I do not know this cheese but when I saw it, it reminded me of hard, wheel cheeses I ate as a child that always had a molded surface that we trimmed off to get the aged cheese inside. It had a nice full flavor. I wish I knew where I could get this in my area so I could try some. Your photo is a good one or else I wouldn't now know something about this cheese and find myself looking for a shop that might sell it. :-)
