Modified 2nd Generation Stevens’ Recipe My father passed down his recipe for fudge, which was proclaimed as the BEST fudge in the world. I’ve improved on it. INGREDIENTS: 32oz. Powdered sugar 1 ½ cups cocoa Pinch of salt 2 tablespoons vanilla extract ½ cup milk ¾ cup of margarine ½ to 2 cups of nuts INSTRUCTIONS: 1. Preheat double boiler on large burner to prevent extra moisture from becoming an issue. 2. Mix milk, margarine, vanilla extract and salt together in double boiler and bring to a boil. 3. Reduce temperature to just above a simmer and add the cocoa first. It will absorb most of the moisture the sugar needs. This will cause the fudge to set quickly! 4. Add the powdered sugar a little at the time. About 1 to 1 ½ cup(s) at a time. Stirring will get to be a challenge, but it will mix if you stir from the bottom up. 5. Add whatever you wish and pour quickly. I mean quickly!! NOTES: I have found that pouring the fudge into buttered ice trays reduces a lot of work. Cutting fudge into small pieces can be a chore.
