Made some yummy French Onion soup at school.The photo isn't the best, that classroom has bad lighting in it and makes it hard to get a good photograph. Anyways the soup turned out pretty yummy and I ate like 3 bowls of it. My team got points deducted for putting to much cheese on it, (Yea right, like there's such a thing as to much cheese on food ) We also got a lecture about food cost when working in a restaurant and adding to much cheese to items. I got a great carmilization on the onions going low and slow on them and almost didn't get it done in time. Most of the other teams burned the onions trying to cook them to fast. I saw some website that says to do the onions in a slow cooker, over night on low to get the best flavor and color from them. Going to try it some night soon when the weather gets a bit colder. We did use some Cognac to deglaze the pan and the cheese was Gruyere and a bit of Parmesan.
