Fried Fish in Pearly Meal with Creole Remoulade Sauce We used Grouper fillets, that we soaked in milk for an hour or their abouts. Pearly Meal is a combo of half Yellow corn flour and half Yellow cornmeal. The redish color you see is Cayenne that was dusted on after it came out of the deep fryer.
