We did Kansas City Barbecued Ribs this week, We made a dry rub for the Baby Back Ribs, then put it in a perforated hotel pan, that was filled with smoldering wood chips, that was quickly wrapped with a boat load of cling wrap and tossed into the fridge over night, (that's called cold smoking). The next day we applied a generous amount of the wet rub and they were steamed for a while and finished on the grill. The stuff in the middle is "Cannellini Beans with Tomatoes and Basil". Cannellini Beans are a large white bean. This recipe has you cook them with a Bay Leaf. Fresh Thyme, Marjoram, Sage, and Parsley Sprigs. Then you do this vinaigrette thing with Champagne Vinegar, Red Wine Vinegar and Lemon Zest. Its eaten as a cold tangy side dish.
