I made the Mexican rice, flan, Mexican Wedding Cookies and helped with the rest. The rice dish was pretty fun to make because its made like a rice Pilaf or Risotto. You saute and brown the uncooked rice, onions and garlic before you add the water. Only thing really missing in the recipe was some tomato paste. We did add some "Annatto" to it. Its kind of a poor mans saffron that adds some yellow-redish color to it.
