Description


A torte is just a fancy name for a specific kind of cake. It is a rich cake, usually multilayered, that is filled with buttercreams, mousses, jams, or fruits. Sacher is a specific type of a chocolate cake, invented by Franz Sacher in 1832. He was only 16 years old and in his 2nd year of apprenticeship. His boss took ill and he was ask by the prince of Austria to make a desert for some special guests. The Prince is reported to have declared, "Let there be no shame on me tonight!". Franz put on his big boy pants and pulled a rabbit out of his keaster. The cake/torte is made like most cakes you make at home, baked in 2 cake pans. But after the cake cools you start slicing it up into very thin layers. I think we got 12 to 15 layers out of the two cakes and that's after you lob off the crown part. The layering goes sponge, then brush that with Simple Syrup with liquor, then Raspberry jam ( the good stuff), then Chocolate ganache. Then repeat till you reach the top of the cake ring / mold. This gets put into the fridge till set and then finished with a chocolate glaze. That means pouring BIG ladles of melted chocolate glaze over the cake till you cant see any cake bits. The Raspberry jam was Marmelade De Framboises and the Glaze was Blonde Glacer. Blonde is what the french call milk chocolate. Needless to say, you don't eat very big slices of this, its one heck of a rich cake.
