ひやし胡瓜(HIYASHI-KYURI) is chilled 'asazuke' of a cucumber with stick.
Asazuke is a Japanese pickling method characterized by its short preparation time.

In viewing this image, I am awestruck by your use of colors. This is a very intriguing image as well as a peek, a gorgeous peek, into Japanese culture.
Of course we know how to make pickles from cucumbers, but to learn of pickled cucumbers on a stick is very nice. Wonder if such a product could be exported? At a reasonable cost? What of a recipe?
