Description
In Filipino cuisine, pancit are noodles and the dishes made from them, usually made with rice noodles.
I went to one of the sister's apartment to celebrate her 87th birthday today. her son prepared this pancit and it was delicious

It's called "pancit bihon." That's my favorite, even better than pancit canton, I think. When I was in the Philippines, every birthdays that I've attended always have pancit bihon on their table. It's always a staple for any occasion-- birthdays, Christmas, New Year, fiesta, anniversary, etc. Usually, we squeeze calamansi juice on top before mixing it all together on your plate. Oh gosh, this makes me hungry. I really miss those days.
