OMG!!!! Oh, that looks sooooooooo wonderful! I love catfish done this way with the chips! I just ate supper, and now I'm hungry again!
When I was working, my partner Ron and I used to go to a place in Kansas City, Kansas called "City Fish." They would serve catfish just like this - and I would stuff myself every time. Sadly, it caught fire some time ago and they decided not to reopen.
