The hat was just done in post work. Made three renders; one complete with hat, hair and background, one hat only (in place) and one background only. All three renders without moving the camera or changing the lights. Then stich them together in Paintshop, erasing the unwanted hairs and hat underside in the different layers. For me this is the simplest and quickest way to go. The other two methods you mentioned is to much work and the result is not always as desired.
