AI assisted, with major modifications in Photoshop. AI is an art tool that can be used like a big brush to add both small and large details to an image. It can create simple things with simple inputs or complex things with complex inputs. You have to have an image in your mind to start with and work towards that image. It took something like 35-40 tries to get close to this image and then I refined it in Photoshop. If you think AI art is easy and not art, then try to make an image like this.
