I haven't heard of an onion festival before. Do they sell dishes starring onions at the festival? (I have not had the privilege of trying a blooming onion but now that I've looked it up i want to try one, they look AMAZING!)

The Texas Onion Fest celebrates the development of the world famous Texas 1015 Onion which was developed in the Rio Grande Valley and is also the State Vegetable of Texas! The name of the 1015 onion came from the suggested planting date, October 15. Texas Onion Fest is sponsored by the Area Chamber of Commerce. The festivities include live local entertainment on two stages, the exciting Onion Eating Contest, delicious food, commercial booths, kiddie rides, Dancing Horses, 1015 Market, Car Show, cooking demonstrations.
Other than the Blooming Onion to eat my favorite thing is watching the dancing horses. They are so well trained they actually do appear to dance to music. Large bags of the raw onions are sold, many to "Winter Texans" who take them home when they leave in the Spring.
