Ahhhh... sorry.... sorta forgot!
Greek Feta Burgers
1 10 oz package of frozen chopped spinach, thawed, drained and squeezed dry
1 table spoon lemon juice
1/4 teaspoon black pepper
l lg. egg white, lightly beaten
3/4 pounds lean ground lamb or ground round
1/2 cup (2 oz) crumbled feta cheese
1/4 cup chopped fresh mint or 4 teaspoons dried mint flakes
cooking spray
4 buns.... I used Italian rolls
1 cup fresh spinach
1/2 cup diced tomato
Cucumber Dill Sauce
Combine first 4 ingredients; add lamb, cheese, and mint, stir well. Divide mixture into 4 equal portions, shaping each into a 1/2 inch thick patty.
Prepare grill.
Place patties on grill rack coated with cooking spray; grill covered 6 minutes on each side until done.
Line bottom half of each bun with 1/4 cup of spinach leaves; top each with patty, 2 tablespoons tomato, 2 tablespoons Cucumber Dill Sauce, and top with bun!
Cucumber Dill Sauce
1/4 cup diced seeded peeled cucumber
1/4 cup plain low fat yogurt
1/2 teaspoon chopped fresh or 1/8 teaspoon dried dill
1 small garlic clove, minced ( I use the minced garlic in jar)
