I noticed in the gallery where the artists list what they used to make an image, several, like some of linwhite's absolutely stunning images list Poser and Fantasy. Now, Poser I'm familiar with..but what does Fantasy mean in this instance?

It just means that the program they used is poser and the section its going in is fantasy. For e.g if it was a fairy/unicorn it would go in fantasy. If it was a vampire for e.g. it would go in horror etc....
