Either set all your materials to black and white or desaturate the image in Photoshop.

Well, the best way is to convert the image in photoshop or what you are using for images.
It is possible to convert all textures before, but it makes not really sence and hasn´t the good result as in postwork. Poser can´t render b/w if the textures are colored. There is no option.

Sivana, Poser (versions 6 and 7) can render coloured textures in b/w if you use the material room. Insert a Math->hsv node between the root node and the image_map node and set saturation to 0. You would have to do that for all materials, but it can be done in Poser. Here's a picture to show what I mean (click it to see it bigger). The SkinHead material is the only one I've added the hsv node to to show the effect. As you can see, the neck, the lips and if you look closely the lacrimal is still in colour, but the face isn't.

i do not want to split hair, but ... desaturating is not the nicest option, since it gives you dull, grey-in-grey results. well, it's a matter of taste of course, so please don't flame me for just an opinion.

just like in photography, i'd recommend to use the channel mixer (offered in most 2D graphical programs like GIMP or photoshop). so - render in colour in poser, and "black/whitify" the result.

for photoshop, there are also quite a lot of ready made b&w conversion plugins available.
