Subject: Convert Radial-to-Grid geometry

I saw in a tutorial a way to convert radial-type edges to grid-type, and can't recall where it was or how to do it. Anyone know how to do this? I tried doing it the long way, creating edges between the outer vertices, but when I clicked on an edge, all the new edges were selected.

Grid Fill is the tool you need to use:

In edit mode, CTRL+F will also bring up the Faces menu, with Grid Fill available.
