As mentioned, the materials and textures are entirely procedural, so advanced users can easily tweak them to their liking. It does depend heavily on the UV coordinates of the model though, so re-using the materials on other objects might not provide expected results. You can bake the maps to the model for export. I have an FBX version with baked maps if anyone would like to use these in other software packages. Just send me a note. I didn't include the FBX in this freebie.

OK . . . Where's my chocolate?
I just opened the scene. Very good materials. They might actually be some of the most realistic looking candy canes I've seen in Blender. You are right that the texture depends heavily on the UV coordinates of these exact models though. I tried changing the stripes to use object coordinates and it messed everything up. I was able to change colors and even changed the design on some of them using the color ramp setup.
If anyone is interested, I uploaded the FBX version of this to my file locker here on Rendo. It contains an FBX with all 6 candy canes and the texture files are baked into PBR maps, which are packed into the FBX. All you need to do is import the FBX in your favorite 3D software and it should load with the texture maps intact. Also, the texture maps will automatically unpack into a generated folder in the same location as the FBX. All you have to do is import.
