Ugh. I've been poking around for about 10 minutes and I cannot find where to edit my forum signature.

I read a post that said it's under "My Options," but I have no idea where that is.

Click on your profile pic top right, then Settings in the drop-down. This is where it gets tricky. Settings has an almost hidden menu on top ( especially hard to find on mobile), you need to click on that, and select Forums from THAT drop-down 

This is not a very user friendly forum design.
