Well, for organics, most ppl. use the poly-by-poly method to construct their models (including me). Some also use Splines to model.

I generally do it poly-by-poly. You could also do it with Splines. Box modeling makes it a bit harder to get the muscle structure right.

Well, it is generally best to start modeling the eyelids and surrounding areas; then move on to other prominent areas (e.g., mouth) and so on.When modeling, it is a good idea to follow the muscle structure of the face. I included a good resource for this; just check the URL for detail. Try finding some muscle reference on the 'net, it'll come in really handy.
For your model, I'd suggest starting over and trying to follow the muscle structure.

I've heard that Poser has problems rendering sharp edges, since it's renderer is designed for organics. You're right, I don't use Poser. My opinions are about your models shown above--not Poser.

Think you should stay away from the razor-sharp edges (especially on stone blocks). Probably be good for you to vary the size of the blocks somewhat and add a few rough edges. Also, you probably should model some of the detail into the stone background. The bump map just doesn't do. Not bad.
