It's the spline interpolation that's giving you the problems. Using a spline break like you did created a spline that runs from frame 1 to 100. You need to add some keyframes between 1 and 100 to control the spline. Open the graph editor and look at the head twist, bend and side to side parameters.. You'll need to add keyframes where the movements get all messed up and move them back into line. If it were me I would change the interpolation to linear and you problably won't have much trouble.
