I am looking for a sewing model/bust like a mannequin with no arms and head. Something like in the image...

I just saw one of those. See KenG's "Early Sunday Morning" package. It's actually an entire street of old-fashioned shops, complete with props. One of them is a sewing dummy. (See the third image.) It's on sale now, and seems like a bargain for what you get.
