Anyone have an idea where I can get - or easily create - Joint Setting poses for the rest of the unimesh folks (Sp, David, Hiro, Aiko 3, etc...)

Use the format of any Pose file. Edit in the channel information as required.

You may find that answer a little brief :)
Could you explain what you are trying to do further.
I may then be able to flesh out my answer.

Fyrespiryt has a tutorial at DAZ Arcana, but be warned - it's not an easy process.
