I'd like very much to use my Gift Certificate to purchase something more than $5; but I'll be needing to pay for my order with a USPS Money Order though.  Could anyone offer inormation about how payment may work in this regard; should I be able to actually place the order and use the Gift Certificate now, then just mail my payment ASAP?

Yes you can do that and just apply your GC and send a money order for the balance:)
