I'm still using Firefox 1.5.0.8 because many of the extensions that I like aren't available for Firefox 2 and now Firefox 3.
Why they keep releasing new versions without bringing the extensions up-to-date is beyond me. At this rate I'll never bother to upgrade, and I'm fine with that :)

New versions are released to improve functionality and security. The vast majority of extensions are developed by third parties. If you want em updated get onto the developers. The changes to upgrade them isn't that great (mostly).
Liking the new version most of the extensions I use work - just the odd ones don't.
