Cindy5663, I'm not sure how much you know or how much info you need , but there's a great magazine called PHOTO Electronic IMAGING (PEI) and in their Feb2000 issue they had an article titled RGB-to-CMYK Conversions - How to Maintain Color Control in Printed Files. It's a pretty good magazine and they have a fairly good site as well.
Idea Digital Imaging has a HTML doc that talks about doing separations in PS6 that may offer some info you want.
I don't know if you've set up profiles yet or not so you can check out Monaco Systems article on Profile to Profile CMYK workflow. It covers using the Profile to Profile command to convert from RGB to CMYK for printing.
Let me know if you have any questions, we'll get you some answers!

Can anyone tell me if there are any tutorials out there on creating CMYK separations? Thanks, C
