This is dedicated to oscilis because she inspired me to take this picture! On Saturday morning Rozanne posted a photograph of some lettuce she's growing. It was just beautiful, and I told her I was going to run right out and take pictures of my rhubarb. So here's the rhubarb, as promised! I'm going to let it get a bit bigger, and then make a crisp: Take three or four nice stalks of rhubarb. Cut off the leaves and throw them away. They're poisonous, so don't cook 'em up as greens! It's perfectly safe to compost them, though. Wash the stalks and cut them into about 1/2" to 1/4" slices. Mix with a good amount of sugar, to taste. (About 3/4 cup, perhaps. Depends on how sweet or tart you like your rhubarb.) Maybe add a little nutmeg, if that sounds good to you. Unsweetened rhubarb is like unsweetened lemons. Not the flavor you're probably going for! Let the rhubarb mascerate in the sugar for a while, stirring occasionally. You can do this directly in your baking dish if you want to. (I do - it saves on dishes.) This is the topping I use: 1 stick butter, softened (slightly melted is okay) 3/4 cup granulated sugar 1 tsp salt Cream together and add 1 cup all-purpose flour Crumble this mixture over the fruit. This is a very plain topping, but it's always a big hit! I use it for apple, peach, berry, rhubarb . . . whatever. (Those of you who have followed along with the bouncing ball already know I hate to cook, so anything I tell you about is gonna be simple!)

My mother made often rhubarb with cream for tart... I don't like... no, no.....but yes for your pict with this excellent green!

Never grew it..and have had limited experience in eating it..but the greens sure look good in the image...but will have to try the topping over other fruit..sounds good..

Yummy, give me something poisonous....not! Lol, my friends swear by strawberry/rubharb piec but I'm just not interested. I tried some stalk by itself once and it puckered me six ways to Sundsay. I don't like tart as it is and this just did me in, lol. So...can we still be friends? Diet Pepsi no ruhbarb and Diet Coke and ruhbarb. hmmmm :)

OH !! I love rubarb and I have them in my garden too :))) Lovely capture and the green color is so life giving to the mind :)))) Did you try to boil them together with strawberry sugar and a little vanilla and make it like stewed fruit with potato flour or other kind of levelling flour with non oxal? And eat it with cold creame or milk if you dont want too many calories :) Strawberry and rubarb are splendid together. YUMMY :)
