Description
Mmmmmm, one of the reasons the physical world wins out over the spiritual. Southern Fried Chicken is without a doubt one of the finer delicacies of life, when properly cooked.
And properly cooked it was being last night's dinner, along with a big pot of lima beans.
Actually, it's healthier than it may look. We always skin the chicken, and fry it in olive oil. Even without the skin, I always get a good crunchy crust on it, but that's a super secret I cannot divulge here.
And the next day, just 30 seconds in the microwave and it's as good as when it first left the frying pan!

When I was young Lima beans were used as a form of punishment. Well meaning parents would threaten children with lima beans if they misbehave. Because of this many children grew up with a strong dislike for lima beans. I've sinced discovered that Lima beans just might be among some of the world's best kept secrets. Slow cook it with chopped onions, rubbed sage and ground thyme and you've got a meal worthy of a King. It's buttery, sweet and oh so tender. Serve over some rice and it's a meal in itself. :) Great pic. Lighting really shows of the fried chicken's golden color. I can almost hear the sizzle of the oil.

Ohhhhhhhhh. That looks amazing. I'm glad you skin the chicken - there's nothing more disgusting than a bite of chicken skin (unless it's the smell of pork cooking! LOL!) and I never get all the crunchy goodness of fried chicken because I take off "all the best parts." And lima beans? Baby, I'll be right there! I just LOVE lima beans. (I haven't had dinner yet. You're killin' me!) :)
