here some people just sitting around eating Red Beans 'n Rice, Jambalaya, and what ever else. Remember if you cook any recipe you do not have to add the hot spices. gumbo will still taste good with out the red peppers but you have to make the roux right to get a good gumbo. I use a hand full of flour and some cooking oil and stir the mixure intill it a dark brown color then add the water. just stand back a little so it will not get on you or the stream also from the water. if you burn the flour; thow it away and start over again. You got to stir it all the time. some will cook it on low for two hours or more and some like me will cook it fast on high. if you donot like the oil just use flour and brown it that way; but it the same tast and if you burn it which you can tell by looks and smell thow it away and strat again or the burnt taste be there. or Paul Prudhomme [ thanks to NekhbetSun for spelling it right. go to show i even ask some one at the coffee shop to spell his name and it was spelled wrong] ..... anyway he make a roux that is diff but it taste super and will taste like gumbo should tast plus is do not have the fats as the oil and flour would have i type in "Paul Prudhomme Gumbo recipes" in google and came up with a lot of them so do his and you will not go wrong. If you think it be too spice use use a little to your likeing and be be all good. I have to add more red pepper myself. man I hunger now lol thanks for looking and comments and votes. sorry i do not sent thank yous out for I time press for now

oh and i do not add Okra to my gumbos mostly people around New Orleans do that. Real cajun in the south middle of the state do not add Okra; that just how it is. New Orlean is creole cooking and here it is cajun cooking. we down to earth type of people cooking and creole is upper class cooking . oh and some one ask about gumbo and where it came from . All I know is the roux came from France

Hey, I got Paul's seasonings all over the pantry and I never looked at his name on the can! I just see the words Cajun or Louisian and I grab it. :-) These kids seem to be enjoying the activity around them. Good casual shot.

Great image! Makes me hungry. Thanks for the gumbo knowledge, Jocko! My mom made it, but I don't find okra in our stores and thought you had to have it. Funny! My mom was from South Alabama and she always started with the okra. Taught us kids how to make roux, too, and on a fast fire because she didn't want to, and we weren't real patient. Hehe. I don't think I've ever had the Cajun gumbo, then. Now you have me wondering how she learned it.
