Description
These are the sweet Fave dei morti or Beans of the Dead, traditionally eaten in Italy on the Day of the Dead, November 2. This is the recipe I was given this morning by my favorite pastry cook for you all.
Ingredients
100 grams (100 g = 3.5 oz)almonds
200 grams (200 g = 7.05 oz)sugar
20 grams (20 g = 0.7 oz)grappa (Schnaps, brandy)
2 egg whites
Vanilla and color for cakes
Grind almonds, a few at a time, until they have a flour-like consistency. Combine sugar, and ground almonds. Beat egg and add to other ingredients, mixing thoroughly in a bowl. Stir in the egg whites with a heavy spoon, mixing until dough sticks together. Work dough until smooth and make into a roll about 1 1/2 inches in diameter (like a 1 euro coin). Wrap in waxed paper and refrigerate 2-3 hours. Then cut off bits of dough (if you feel like you can mold them into kidney-shaped pieces about as big as large lima beans,but we don't do that in this region). Bake on greased cookie sheet in moderate oven (350° F. or 200° C.) for 5 to 10 minutes at the very most. Cool on wire racks; store airtight. Cool 5 minutes before removing from pan with spatula. You’ll get about 70 sweet beans.

Never heard of these, but they sound good! Almonds, eh? I love marzipan, so this seems to be right up there!
