The caper (capperis spinosa) is a small evergreen shrub, native of the Mediterranean and Central and South Asia, very popular in Italy. It can reach one meter in height, and usually develops as groundcovers or hanging drywall or along cracks in the rock. He looks messy, much branched and dense, the leaves are rounded, leathery, dark green, waxy, flowers are large, decorative, white or pink, very showy, bloom in summer. In the kitchen using the immature flower buds and fruits, which are preserved in vinegar or salted; have intense flavour and spicy and is eaten alone or used in sauces or seasonings.
Capers require very sunny to develop the best, love and Mediterranean plants are very hot summers, with temperatures well above 35-40Ā°C, and mild winters, although they can withstand brief periods of frost is not too intense.
