I like #1. I agree with richardson... lower the AO strength and distance just a little bit. It's quite dark and heavy for that lighting, but everything else is looking real good. Nice work.

I really like #2. Although, (my opinion only ;) ) I'd really like to see some of that neck texture in there. It's a shame to loose that, and it really adds to the character ;)

I prefer Number3: Number 1's hands don't seem to display much texture/bump, and the left hand looks kinda wierdly shaped. Also, in Number 1, some portions of the blood trickle don't look as though the same lighting/shadowing in the scene was applied to it. Number 2 isn't that much different from Number 3 (at first glance) but upon closer observation, I think the granite effect gives #3 more realism. Could you reduce the granite on his forehead but keep the granite on the rest of the face? Just my (subjective) opinions!
I realize what I don't like about image #1. It's the fact that there is no distinction between the victims head and neck, and the unrealistic straightness between the neck and the shoulders. To be honest it took me a couple of minutes to figure out that that was supposed to be a person and the only reason I did put it together is because of the vampire and the bloody teeth which caused me to look closer and I saw an ear.
Perhaps some hair on the head of the victim, maybe a different angle that shows some of his face...
