What is difference in V7 G3F? really .don't thy use the same uv set?

V7 is a character for G3F. You can use G3F without V7 but you can't use V7 without G3F.

Or G3F is the base mesh for the generation, V7 is the figure from the base mesh (with their own UV or not) and anything based from that is the character.

Back in the Gen4 days, V4 and M4 was the figure (with its own UV) built from the base mesh (which was never available for use) and anything based from those figures where the characters.

Users and vendors can use the base genesis mesh for characters (from the morph packs or unique sculpts) or using a Figure such as V7 as a starting point.
