you will always have the range from craftsman via artisan to artist in photography (hoping these English words describe properly what I intend to express).
and you will always meet purists (saying f.i. that true photography is in B/W, printed on baryte paper in your own darkroom).
another dimension is between amateur and professional (i.e. those living from their photography).
I think only for the latter working with raw-files is a must (if not even in medium format).
That in contrast to the fact that f.i. for me as an amateur my Fujifilm boxes have jpeg-engines fine enough to meet my requirements - while processing thousands of raw-files is far beyond my budget in free time....
With the FinePix S3 pro I did some RAW shootings in the beginning (some of the series with the red haired Nina) but the jpg's are more than sufficient (see attached image).
Even for the more compact s7000 the use of a tripod and a slight exposure bias (-0.3) produced the recently posted sunrise images as unprocessed jpg's.

I'd prefer the second version - but to judge a B/W version on screen - especially LCD or TFT - is hard. printed versions even become worse if printed with inkjet.
take kind of a reference image, store the postwork options and print it on a good printer (eg Epson Stylus photo R2400 with matte ink on matte paper (Hahnemühle/Lumijet) or a wet chemistry print) then you may have a real kind of reference....

The Fuji E900 is great for 9MP resolution but that brings the optics on the edge - the digital part is too strong for the ability of the lense in my view. Makes great pictures without any doubt.
The F30 is great in low light conditions - would be my favourite although it has no optical viewfinder.
A big advantage of the E900 is the use of AA size cells.
Having (and loving) a S7000 and S3 I'd tend towards the F30 (having sold my F410) ....

The basic question would be about your photographic behaviour.
The "prosumer" cameras on the edge between compact cameras and SLR's have the advantage of "no dust on the sensor", essentially one lense (perhaps some small add-ons) and fairly good quality (Panasonic, Samsung... I love my Fuji S7000 with 12MP and gorgeous colours). Very good allround equipment.
More sophisticated with more degrees of freedom are of course SLR's where you only are restricted by your budget. (I love equally my Fuji S3 with Nikon lenses....)
My advice would consequently be to get a very good prosumer camera and check whether you really need more for what you are doing....
