i suppose the best way to do something like that would be to set up a function through which water particles change colour and texture as they interact with the boat, therefore creating the illusion of a trail, but i'm guessing that vue doesn't really focus on that type of processing and even if it did, i'd still have no idea how to do it :p
Only the function wizard DBurdick would know. He did a very very good tutorial about foam for water at the beach. Maybe this concept can be used because it has a sort of interaction between beach and water material - when i understood it right.

Alternatively, you may wish to consider using the RealWave function the RealFlow3 demo from Next Limit Technologies. I use a full licenced copy but understand the demo is functional (for non commercial work). My licenced copy will output a series of meshes in .obj format making it useful for programs that do not load RealFlow binary sequences.
