how do you change materials and textures in DS short of using a pose file?

Well, to change them manually, just use the Surface palette ;)  (If it's not already loaded, go to View>Tabs>Surface, and it'll pop up), and you have either the basic or advanced surfaces at your fingertips ;)

It's a good diea to turn on Show surface list from the options menu (triangle button at top-right o fthe palette). You can use ctrl and shift to multi-select in the surface list, and in the drop down list if you choose not to have the permanent list up, and there are copy and paste buttons too.
