OK...

how can I change a material setting? I went looking for a "materials" tab.

Thought it was shaders...but...

I want to change just a material of an accessory on a hair model.

There should be a surfaces tab on the right side. Make sure the object you want to change setting is selected. You can change one zone or multiple by ctrl-left clicking the material zones.
