Description

I took this photograph last August, and forgot I had it! I believe these tomatoes ended up as follows: Heat up a good amount of olive oil in a small saute pan. (No - a little bit more than that. You're making sauce for pasta, and you'll want enough to coat it lightly.) Add herbs - whatever you like. Maybe oregano, dill, thyme, basil. Cracked pepper, for sure. Let the herbs heat with the oil. Cut your fresh-off-the-vine-home-grown cherry tomatoes in half, and put them in the pan with the oil. Stir once in a while. This should only take a couple of minutes. When the tomatoes are cooked through, add some goat cheese. It melts quickly, and thickens the sauce. Pour over pasta. Enjoy! By some weird quirk of the universe, I'm a really good cook, even though I purely HATE cooking! I came up with this one day based on the fact that I had some goat cheese and a tomato and a kitchen, and not much else. On various occasions I have added other veggies, such as green beans or asparagus tips. "The only thing domestic about me is that I live in a house!"

I cook all our meals and rarely go out to eat. This little recipe sounds delicious, thank you! We sometimes have jalapena burgers on the grill but for a regular burger we go to Bristol Tap....about the only time we eat out.

I like the picture of the tomotoes....My daughter has goats and she is thinking about making goat cheese, so maybe I'll be using your receipt..I can hardly wait for asparagus, should be soon.
