Years ago my friend Winnie introduced me to her fabulous pepper salad. I'll tell you how to make it, but will warn you in advance: if you need specific measurements, don't ask me for a recipe! I just throw things together until it looks right. Thinly slice three peppers ... one red, one orange and one green, being careful to remove the seeds and ribs. Thinly slice a small Walla Walla (or Vidalia) onion. Hmmm ... I don't know what's available in your area, since Renderosity is all over the world! The onion I'm talking about is a nicely sweet one. Walla Wallas are grown here in Washington, and Vidalias are from Georgia. I'm sure everyone has some equivalent of a sweet, non-pungent onion! Toss the onion and peppers with some chopped parsley (basil is a nice alternative) and whatever oil and vinegar dressing you like. You can use rice vinegar, balsamic, whatever you like best. Sesame oil, grape seed, extra-virgin olive ... the idea is to make it the way YOU like it. Season to taste with salt and pepper. Add crumbled feta if you like it. Maybe a thin-sliced tomato or an avocado would be nice. Pepper salad makes for a wonderful, fresh treat any time of the year!

Sounds good, though I'd probably disgust a lot of people by using crumbled bleu cheese and chunky bleu cheese dressing.... Great photo, Tara

Wonderful and colorful capture. Looks like you have all the makings here for a great stir fry as well. I'll give you mine; Olive oil in a wok. Saute half an onion and one carrot. Add meat if you want, ground turkey works very well. Some minced garlic. Once the meat is browned add half a bell pepper, half a zucchini and mushrooms. Saute for a few more minutes. Add a half cup of cooked brown rice and shredded cabbage. Add a half-and-half mix of sweet cooking sake and soy sauce (about three tablespoons each) and one egg. Blend thoroughly until the egg is cooked. Serves two or one glutton. Cheap, nutritious and tasty.

Great, colorful photo! And so, so deadly to me. I have a hyper allergic reaction to these guys. I have almost died from them. Think peanut allergy, but with cute, colorful bell peppers! Makes eating out, let alone going to a foreign country feel like walking in a minefield. My wife hates the flavor, so she is my "taster". Boy, does that sometimes get us odd looks! I don't hate them. I love their colors!
