My rock monsters (made about a week ago) are essentially just a pile of rocks, but they have a simple metaball skeleton inside the figure to help fill any gaps that may happen between the rocks (my rocks refused to fit together as neatly as yours).

Way bigger file size, but I like the rougher look in the geometry. Really only good for being close to the camera, not neccessary in midground or background instances.
Texture is a mix of 3 rock images from Nvidia's texture pack. (http://developer.nvidia.com/object/IO_TTVol_01.html)

ON the nvidia site theres some little programs/scripts to help you deal with DDS files (at least I hope they help you deal wioth DDS files). I did a search on "texture" on their site search to find them.

Nvidia has some tools to work with .dds http://developer.nvidia.com/object/dds_utilities.html I used the Photoshop plugin and a default script (File>Scripts>Image Processor) to convert all the dds to psd's, and then another program to save them as jpgs. I also believe remember my default pic viewer, "Irfanview" could view/convert them. (www.irfanview.com) AS

ZBrush. I imported the stack in, subdivided a couple times, and just used the an image texture of rock to apply to it as an alpha mask, and then you "Inflate" it. It's sorta like if you could slowly apply an image to a terrain, and see it rise, and then just stop it where you wanted. Except, obviously, this isn't a flat surface. AS

Finally got round to sorting this out. You can download the rockstack and texture for yourself. Theres also a mini tutorial, which really just outlines briefly how it was made.http://joevinton.blogspot.com/
