Here next to the cooking room they had set up what looks like boudin and sausage. Boudin was bought in by the Acadian freach people. Boudin means in English blood sausage. That how they use to make it with the blood in it still red. You can not buy that anymore. Just the white boudin without the blood in it. It is fully cooked now and most stores around here have some hot and ready to eat as you walk in. You can get the boudin rouge[red] at some people houses for they made it themself.[I will not eat it lol] Now as for the differ sausages; the Gremans brought that in when they came into the area. There a lot of real good and hot[spice like red pepper] sausages you can buy here. thanks for looking and comments and votes

Fantastic pic! Yes, New Braunfels is close to us, and it is primarily a German town. They have a place there that makes wonderful German sausage. Love sausage! V (:

Ahh Boudin (drowling) I love that stuff . My friends mom in La made it for a store and it was to die for. I am going to make some soon ;) Awesome pic my friend .Boudin is not really so much a sausage so to speak.Uses all kinds of stuff in it like rice in some Boudin ;)

Thanks jock! My wife once lived in LePlace, or is it LaPlace..."sausage capitol of the world" full of Cajun sausauge. Thanks for this shot. I know the first generations to that land were poor people, evicted from other land. They did pretty well considering little to do with.

On my paper rooute as a boy I had a Danish lady Mrs. Sorenson who made sausages. On a blizzard day with deep snow when I walked up to her house to collect I could smell the spiced meat of her sausage making. In the house I saw machines like this. Now a pun. Of all the sausages I know, chorizo is the wurst.
